Food safety consulting & training · United States
Both sides of the audit. Your program, built accordingly.
BRCGS, SQF, PrimusGFS and GLOBALG.A.P. programs, FSMA preventive controls plans, and FSMA 204 traceability — documented to satisfy the auditor and simple enough that your crew actually runs it.

Bilingual · Bilingüe
Written for the auditor. Taught in the language your crew speaks.
Your documentation has to satisfy an auditor in English. Your crew has to understand it on the line at six in the morning. Rocio works in both — food safety training, procedures, work instructions, and incident interviews delivered in Spanish, with documentation that holds up in English.

What we do
Four ways to work with us.
Most clients start with one and end up using several — a plan is only as good as the crew that runs it.
Consulting
Hazard analysis, written plans, mock audits, and corrective-action support for growers, packers, processors, and manufacturers.
Online courses
Short video modules with a quiz after each one — the foundations every line employee needs. In production now; join the list to hear when they open.
In-person workshops
Instructor-led courses with hard seat limits — FSMA 204 traceability now, preventive controls next.
Resources
Plain answers on the FSMA 204 deadline, what a critical tracking event actually is, and choosing between BRCGS, SQF, PrimusGFS and GLOBALG.A.P.
Clients
Sierra Safe Solutions guided Anacapa Avocados through our first PrimusGFS certification. Rocio built our food safety program from the ground up, trained our team, and made an overwhelming process feel clear and manageable. We scored 98% on our first complete audit across Modules 1, 5, and 6, and closed out our corrective actions to finish at 100%. She also led our GS1 implementation and with Sierra Safe software we now have access to an enterprise-level food safety management system that allows us to track the lifecycle of the product from farm to our retail customer — meeting our retail buyers’ labeling requirements and laying the foundation for full traceability next year. We HIGHLY recommend Sierra Safe Solutions to any grower or packer.
Rocio Carrion has been an invaluable partner in strengthening our food safety and SQF programs. Rocio brings deep technical expertise with a practical, hands-on approach — she improved our documentation, implemented digital forms that streamlined daily operations, and prepared us to meet SQF certification and customer requirements with confidence. We highly recommend Rocio Carrion to any food manufacturer pursuing SQF compliance.
How an engagement runs
Four stages, in this order.
These steps are sequential because each one produces the input the next one needs. We don't skip ahead.
Walk the floor
A half-day site visit with flow diagrams, temperature logs, and a candid look at what actually happens on shift.
Hazard analysis
Biological, chemical, and physical hazards identified per process step, with control points and critical limits set to source.
Write & train
Plan, SSOPs, monitoring forms, and the training that makes them run. Documents you can hand to an auditor without a preamble.
Verify
Mock audit, record review, and a written gap list with owners and due dates. Re-verification at 6 and 12 months.
